Recipe: Pastel de choclo con polenta
I recently inherited a bag of polenta that I had to put to good use. Instead of going the easy (Italian) route, I decided to see if I could use it to sub fresh Peruvian corn to make our version of cottage pie. Thus, pastel de choclo con polenta was born. The recipe calls for ají amarillo paste and ají panca paste. If you don’t have ají amarillo I would not bother trying to find a substitute as most chilli pastes will add heat rather than flavour. If you don’t have ají panca for the filling, you can use tomato paste instead. This dish is gluten-free and can be made…

Recipe: Chocolate peanut butter protein shake
This recipe is for the chocolate + PB combo lovers out there. It is great as a post-workout drink if your next meal is a few hours away or can sub for breakfast as it is high in protein and reasonably filling. This shake can be made dairy-free depending on the protein powder you use. I used natural grass-fed whey protein isolate (WPI) from 180 Nutrition. I’m also a big fan of the True Protein natural WPI. For a dairy-free/vegan version, you can use pea or rice protein (or a blend) from one of the brands mentioned before. I used peanut butter powder from True Protein. Other supplement shops also…

Recipe: No bake low carb cherry cheesecake
No bake low carb cherry cheesecake is a quick and easy recipe to satisfy your sweet tooth during the summer months. This recipe is vegetarian, high in protein and free of added sugar. It is not low carb or keto, but all the sugar comes from the cherries so there’s no need for you to feel guilty. I used Natvia natural sweetener, but feel free to use your favourite. I recommend using stevia and/or monkfruit. Final note on ingredients: different brands of cottage cheese have different amounts of water and fat. Therefore, the recipe calls for a variable amount of water to be used when whipping the cheese. You are…

Recipe: Pistachio pesto pasta
I love pesto and basil remains my favourite herb/vegetable base. However, I’m not too strict when it comes to nuts. This recipe for pistachio pesto pasta pairs fragrant basil with sweet pistachios for a delicious alternative to classic pesto. This recipe is vegetarian. It can be made gluten-free and/or low-carb depending on the pasta or pasta substitute you choose. I used Barilla red lentil penne but feel free to use your favourite pasta. As usual, I roast the garlic before mixing it with the rest of ingredients. However, I don’t recommend firing the oven just to roast it. Instead, pop it in the oven while you are roasting other foods…

Recipe: Spinach and tomato frittata
I love frittatas because they are so versatile. They can be eaten any time of the day, hot or cold. They are also great for using vegetables that might not be at their prime. This spinach and tomato frittata is a basic recipe, a blank canvas for culinary creativity. As it stands, this spinach and tomato frittata is gluten-free but not dairy-free. You can make it dairy-free by using non-dairy yoghurt and nutritional yeast for that cheesy flavour. If you do dairy, you can use cream instead of sour cream and your favourite cheese. Also, feel free to add your favourite herb(s) and/or spice(s). I would suggest dried oregano, fresh…

Recipe: Cucumber lemon green protein shake
Green smoothies and protein shakes can be a great way of increasing your vegetable intake. My cucumber lemon green protein shake is a refreshing and nutritious option you can have for breakfast or post-workout. Adding some fruit to smoothies is good but adding too much can be a problem for some people who need to regulate their blood sugar. This recipe uses natural sweetener for taste (e.g. Raw Earth or Natvia). I recommend using a neutral-tasting protein powder, such as natural whey protein isolate (WPI) from either 180 Nutrition or True Protein.

Recipe: Pasta alla trapanese
Pasta alla trapanese is a traditional pasta from Sicily that I had never made nor tried before. I decided to make a version of it to pair it with Barilla chickpea casarecce, which is typical in the same region. Of course, you can use any kind of dried pasta. Check my article Which pasta is better? if you want some information before choosing one. This dish takes its name from pesto alla trapanese, a tomato and almond-based pesto from the province of Trapani in Sicily. Unlike the more popular pesto alla genovese, it usually contains very little basil (my recipe has a bit more because I <3 basil). This recipe…

Recipe: Pasta puttanesca
Even though I don’t eat much pasta these days, pasta puttanesca is still one of my favourites when I partake in carb loading. The key ingredients (anchovies, tomatoes and olives) dial up the umami level of the sauce, making it impossible to resist. I used Barilla red lentil penne but you can use any pasta you like. Check my article Which pasta is better? if you want some information before choosing a vessel for the sauce. This recipe is not vegan but it is dairy-free. It can be made gluten-free and/or low-carb depending on the pasta or pasta substitute you choose. Finally, I served the pasta with sardines for extra…

Recipe: Roasted beetroot, goat’s cheese and pistachio salad
Call it classic or call it cliche, beetroot and goat’s cheese are meant to be together. This roasted beetroot, goat’s cheese and pistachio salad is great for sharing or eaten as a main meal with a little extra protein. Good options include eggs (your way), lentils, tuna, salmon (smoked or canned) and grilled chicken. If you don’t have the time or patience to roast the beetroot, you can use the pre-packed cooked variety.
