    Mojo gut shots are a new non-dairy probiotic product by one of the most popular Australian kombucha makers. Like other fermented foods, these shots may help improve gut health.     This is a healthier twist on the traditional cocktail chilcano de pisco. I use kombucha instead of ginger ale to lower the sugar content. I’m not sure if the alcohol negates the beneficial probiotic effects of the kombucha but it sure tastes great. I used ginger & lime kombucha this time, but any ginger-flavoured kombucha will do.

    I get excited every time I see a new brand of kombucha popping up because that means I can continue avoiding making my own. The medium size of Tonicka kombucha (330 ml) comes in an elegant dark bottle that made me think of boutique beer. I bought it at Dr Earth for $5.14 (discounted from $6.50). They make only one flavour, which is a good thing because that means no added sugary mixes to their brew. I liked its crisp, tangy flavour. Will buy again.     Lamb is not a very popular meat in my hometown. It is in the highlands, but for some reason the urbanites prefer beef. This is a beef version of the lamb seco I published a while ago. Now, I know that this will sound insane… but I decided to use kombucha instead of chicha de jora, knowing that a) the stuff is not cheap, and b) the cooking process kills the beneficial bacteria.     The first time I heard the word kombucha was in System Of A Down’s Sugar (“the kombucha mushroom people, sitting around all day…”). Curious as I am, I looked for the term online and found that it was a fermented drink that hippies used to drink.
