Recipe: Sous vide pork with fennel and orange salad

    September 27, 2022 /

This sous vide pork with fennel and orange salad is deceptively easy to make, provided you have the right gear. The flavours are inspired by classic Italian dishes. Can you make it without a sous vide device? Yes, but the end result will not be exactly the same in terms of texture. That’s it, so feel free to cook the pork like you normally would if you don’t have the means to sous vide it. The recipe instructs you to segment the orange. This means peeling the orange (cutting off the top and bottom first, then peeling top to bottom) and then cutting the orange in segments avoiding the membranes.…

Recipe: Roasted fennel and lentil salad with radishes and citrusy dressing

    September 12, 2020 /

Roasted fennel and lentil salad with radishes and citrusy dressing is a great dish for lunch or dinner. Its protein and fibre content will satisfy your appetite without packing on too much energy. This recipe is gluten-free and dairy-free and can be made vegan by omitting the eggs. Just make sure you are having enough protein in your day. This salad is also a great source of fibre. Lentils contain haem (plant-based) iron, which is less bioavailable than haem (animal-based) iron. Its absorption is enhanced if you have vitamin C or haem iron in the same meal, hence the lemon juice in the dressing. Other citrus options such as orange…

Recipe: Salmon with roasted Brussel sprouts, fennel and pesto

    September 5, 2018 /

This is an easy recipe that combines some of my favourite things: crispy skin salmon, Brussel sprouts and pesto. This is a meal packed with healthy fats, including omega-3 from the salmon and monounsaturated fats from the extra-virgin olive oil. This dish is gluten-free and low in carbs. Feel free to swap the vegetables for your favourite ones or whatever you have available. I used Pecorino cheese (made from sheep’s milk) instead of Parmigiano Reggiano because I prefer its sharp taste, but you can use regular Parmesan. I also left out the garlic – I prefer using roasted garlic instead of raw in sauces but wanted to keep this recipe…

    September 4, 2015 /

This is a quick weekday recipe that combines two of my favourite things in winter: soup and fennel. Add one of my favourite things regardless of the season (i.e. pork, in the form of ham) and you have a rounded meal for 4.
