
Recipe: Slow-cooked apple BBQ pork with Brussel sprouts and fennel
Not much explanation required for this recipe. Everyone knows that apples, onions, Brussel sprouts and fennel are all great with pork. Using a slow-cooker and a junk-free barbecue sauce make this meal not only delicious but very easy to make.

Slow-cooked apple BBQ pork with Brussel sprouts and fennel
This slow-cooked apple BBQ pork with Brussel sprouts and fennel recipe is an easy recipe with ingredients that go perfectly with each other.
Ingredients
- 1.5 kg pork shoulder
- salt and pepper
- 1 apple
- 1 red onion
- 1/2 cup coconut barbecue sauce or your barbecue sauce of preference
- 1 tsp liquid smoke optional
Brussel sprouts and fennel
- 500 g Brussel sprouts
- 2 small fennel bulbs
- 1 tbsp fat of choice (bacon fat, tallow, ghee or butter)
- salt and pepper
Instructions
Pork
- Season pork with salt and pepper, place in slow cooker.
- Peel, core and slice apple.
- Slice onions.
- Cover pork with apple, onions, barbecue sauce, and liquid smoke. Cook on low for 8 – 9 hours.
Brussel sprouts and fennel
- Halve Brussel sprouts and steam for 3 minutes.
- Thinly slice fennel.
- Heat fat in a pan at medium-high heat, cook fennel for 3 minutes, add Brussel sprouts and cook for another couple of minutes. Season with salt and pepper.
- Serve and enjoy.
