1tbspfat of choice (bacon fat, tallow, ghee or butter)

Instructions
Pork
Season pork with salt and pepper, place in slow cooker.
Peel, core and slice apple.
Slice onions.
Cover pork with apple, onions, barbecue sauce, and liquid smoke. Cook on low for 8 - 9 hours.
Brussel sprouts and fennel
Halve Brussel sprouts and steam for 3 minutes.
Thinly slice fennel.
Heat fat in a pan at medium-high heat, cook fennel for 3 minutes, add Brussel sprouts and cook for another couple of minutes. Season with salt and pepper.
