Recipe: Escabeche de pollo
Escabeche de pollo belongs to a family of dishes with Spanish influence in which the main ingredient is marinated in acid, usually vinegar. In Perú, escabeche dishes contain thick slices of red onion, vinegar and Peruvian chillies, either amarillo, panca or both. Escabeche de pollo (chicken escabeche) is usually served at room temperature with boiled potatoes or sweet potatoes and/or rice. When I was growing up, it was a common dish to serve at parties (a party in Perú is not a party if there’s no dancing and no food).

Recipe: Pastel de choclo con polenta
I recently inherited a bag of polenta that I had to put to good use. Instead of going the easy (Italian) route, I decided to see if I could use it to sub fresh Peruvian corn to make our version of cottage pie. Thus, pastel de choclo con polenta was born. The recipe calls for ají amarillo paste and ají panca paste. If you don’t have ají amarillo I would not bother trying to find a substitute as most chilli pastes will add heat rather than flavour. I love pesto and basil remains my favourite herb/vegetable base. However, I’m not too strict when it comes to nuts. This recipe for pistachio pesto pasta pairs fragrant basil with sweet pistachios for a delicious alternative to classic pesto. This recipe is vegetarian. It can be made gluten-free and/or low-carb depending on the pasta or pasta substitute you choose. I used Barilla red lentil penne but feel free to use your favourite pasta. Pasta alla trapanese is a traditional pasta from Sicily that I had never made nor tried before. I decided to make a version of it to pair it with Barilla chickpea casarecce, which is typical in the same region. Of course, you can use any kind of dried pasta. Even though I don’t eat much pasta these days, pasta puttanesca is still one of my favourites when I partake in carb loading. The key ingredients (anchovies, tomatoes and olives) dial up the umami level of the sauce, making it impossible to resist. I used Barilla red lentil penne but you can use any pasta you like. Call it classic or call it cliche, beetroot and goat’s cheese are meant to be together. This roasted beetroot, goat’s cheese and pistachio salad is great for sharing or eaten as a main meal with a little extra protein. Good options include eggs (your way), lentils, tuna, salmon (smoked or canned) and grilled chicken. If you don’t have the time or patience to roast the beetroot, you can use the pre-packed cooked variety.

Garbanzos con acelga (chickpeas with silverbeet) is a traditional Spanish stew. This recipe is gluten-free, high in fibre and vegan if you use vegetable stock. Like many other dishes from Spain, this one has been adopted and adapted in Peruvian cuisine. We tend to make it with ají panca instead of tomato paste, and serve it with rice instead of bread. My unorthodox contribution is that squeeze of lemon juice at the end to add brightness. Pumpkin is one of my favourite ingredients for soup because it’s versatile, cheap and easy to work with. This spiced roasted pumpkin and zucchini soup is a perfect example of a simple and economical dinner you can make on a weeknight. This soup is naturally gluten-free and can be made vegan if you use dairy-free yoghurt and vegetable stock. Add a source of protein (e.g. boiled eggs, lentils or chickpeas) to round off the meal.

Recipe: Eggplant, beef & mushroom casserole
Eggplant, beef & mushroom casserole is the perfect winter dish. It is not only warming and comforting, but it also contains a lot of veggies and good quality protein. I used organic mince with organs from Feather and Bone, but you can use regular beef mince. Feel free to add whatever vegetables you have lying around in your fridge. If you don’t do dairy, it tastes wonderful without the cheese, too.
