Recipe: Eggplant, beef & mushroom casserole

    June 29, 2019 /

Eggplant, beef & mushroom casserole is the perfect winter dish. It is not only warming and comforting, but it also contains a lot of veggies and good quality protein. I used organic mince with organs from Feather and Bone, but you can use regular beef mince. Feel free to add whatever vegetables you have lying around in your fridge. If you don’t do dairy, it tastes wonderful without the cheese, too.

    Product review: Four Sigmatic

    August 22, 2018 /

Four Sigmatic is a brand of mushroom-based beverage blends. The company was born in Finland and now operates from the US. Their beverage blends are highly regarded in the biohacker community and are endorsed by influencers such as Tim Ferris, Ben Greenfield and Emily Schromm. What are functional mushrooms Mushrooms have been used for their nutritional and medicinal properties for centuries in several cultures (1, 2, 3). Thus, many mushrooms can be considered “functional”. Nutrients in mushrooms Mushrooms contain: carbohydrates, mainly polysaccharides (i.e. many sugars) which act as dietary fibre and prebiotics (i.e. food for gut bacteria), etc. (3, 4) amino acids (3, 4) polyunsaturated fatty acids (3) other molecules…

    Recipe: Vegan causa

    September 10, 2015 /

Yes, vegan. Before you think I’m crazy for bastardising one of my national dishes, let me explain. I made this version for an assignment for which I had to modify a recipe for social (i.e. religious, ethical, etc.) reasons. I thought of causa because I know people make vegetarian versions all the time (not me, I love it with seafood) but I have never seen a vegan version out there. Not only I had to ditch the main protein, but also the eggs used as garnish and in the mayo. I combined a few vegan soy-free mayonnaise recipes I found online and the result was awesome! Also so much easier…

No fancy story behind this dish. I was browsing Feather and Bone‘s weekly list to order meat and noticed they had speck ends for cooking. They are cheaper than bacon and ham, and come from the same top-quality piggies. Mega win.
