    Recipe: Macadamia coconut and lime bliss balls

    Bliss balls are the perfect snack when you are not that hungry and/or you intend to share. You can bring them to the office, the gym, picnics, etc. These macadamia, coconut and lime bliss balls are not only delicious, gluten-free, dairy-free and vegan but also sugar-free. (That does not mean you should eat the whole batch, though). Enjoy! I normally use Macro macadamias and shredded coconut from Woolies. Use a natural sweetener, such as this one or this one.

    These tasty snacks are called lamington bliss balls because they share two key ingredients with the Australian iconic cake: chocolate and coconut. As they are not real lamingtons, you don’t have to wait until the next Australia Day to make or eat them :). The hardest step of this recipe, besides melting the chocolate, is waiting for the chocolate to dry. These lamington bliss balls are gluten-free and can be made dairy-free/vegan depending on the chocolate you choose. Enjoy!

    On my very first visit to Paleo Cafe one of the many things that grabbed my eye was CocoLuscious organic coconut ice cream. The fact that Alvaro was not there was the perfect excuse to buy a tub to bring home. With many flavours to choose from it was very tempting to grab one of each but the price tag ($12+) helped with restricting the purchase.     Here’s a 2-ingredient recipe for a great tasting smoothie. We used lúcuma powder because we love it and get it cheap every time we go back home (you can buy it here but it’s freaking expensive). You can substitute cacao powder or fresh/frozen fruit. The possibilities are endless.

    I’ve been using Niulife coconut products for a few years now, so I thought it was time to give them a review. Coconut flour: for baking and cooking. I don’t bake that often but it’s handy to have for those special occasion treats. Shredded coconut: usually for eating straight out of the bag (very handy when travelling), mixed with macadamias and cinnamon, or for making grain-free granola, smoothies, desserts, coconut butter, meatballs, coconut cauliflower rice, etc. Coconut flakes: same deal as the shredded coconut: straight out of the bag, with macadamias and cinnamon, for caramelised coconut chips, etc. Creamed coconut: This thing is unbelievable.     Who doesn’t like affogato? Besides people who don’t like coffee. Or ice cream. Or cold coffee. Well, you get my point. Because I have no desire of consuming regular ice cream any time soon (the dairy and sugar combo just kill me), I’ve been making my affogato with frozen coconut cream. I haven’t added any extra flavourings yet but I suspect it would be equally delicious with a dash of vanilla or almond essence, or a sprinkle of cinnamon.

    Happy Australia Day! Time for a confession: in the 4 years I’ve lived in Australia I have never eaten a lamington. When we were “fresh” in the country I didn’t like coconut. Over time, this aversion disappeared but I just wasn’t too excited about sponge cake with chocolate icing and desiccated coconut. Then I ditched the grains so lamingtons were out of the question.
