Recipe: Onion and mushroom soup with lentils
This onion, mushroom and lentil soup is a hearty French-inspired meal for the cooler months. It’s a delicious way to get a good dose of vegetables for the day. The main ingredients in this soup contain dietary fibre and other micronutrients such as vitamin D (mushrooms if irradiated), folate and non-haem iron (lentils). This recipe is gluten-free and vegetarian. It has some protein from the lentils but I’d recommend adding one or two eggs to make it more satiating.

Recipe: Smoked pork, mushroom, ginger & cabbage soup
This recipe is more a guide than an actual recipe. Yes, this is an excuse to be inaccurate with the quantities. The results will be great, give or take reasonable amounts of any ingredient. Lately we’ve been alternating our meat breakfasts (some kind of minced meat with different veggies and seasonings) with egg-based breakfasts. I make a big tray, cut it in portions and put them in containers so they’re ready to be reheated and consumed during the week. Here’s the recipe for the latest crustless quiche…
