What to do with canned beans

    May 20, 2020 /

Canned beans are great additions to a healthy diet. They’re cheap, nutritious, convenient and shelf-stable. Keep reading if you’re looking for ideas on what to do with canned beans, chickpeas and lentils. Types of canned beans All types of legumes (e.g. beans, lentils, chickpeas, peas) can be found in canned form. In most cases, they’re either canned in water with or without salt, except for baked beans. Nutrient composition Canned beans, chickpeas and lentils are a good source of fibre and a decent source of protein, folate and other micronutrients. What’s nice about these legumes is that there’s virtually no nutritional difference between cooking them from dried or buying them…

Recipe: Garbanzos con acelga y chorizo (chickpeas with silverbeet and chorizo)

    September 7, 2019 /

Last week I posted a recipe for the “regular” version of garbanzos con acelga (see recipe here). Garbanzos con acelga y chorizo is a tasty variation which includes the popular Spanish sausage for the meat eaters out there. Before you start, a few notes on ingredients: Last but not least, as with any stew, this tastes better a day or two later.

Recipe: Garbanzos con acelga (chickpeas with silverbeet)

    August 31, 2019 /

Garbanzos con acelga (chickpeas with silverbeet) is a traditional Spanish stew. This recipe is gluten-free, high in fibre and vegan if you use vegetable stock. Like many other dishes from Spain, this one has been adopted and adapted in Peruvian cuisine. We tend to make it with ají panca instead of tomato paste, and serve it with rice instead of bread. My unorthodox contribution is that squeeze of lemon juice at the end to add brightness. Most importantly, the vitamin C from the lemon will help you absorb the non-haem iron present in the chickpeas and the silverbeet (a.k.a spinach in Australia). Last but not least, as with any stew,…

    Recipe: Black sesame baba ganoush

    October 20, 2018 /

Black sesame baba ganoush is also (see my recipe for black sesame hummus) my kind of dip. Tasty, healthy, black. It looks scary enough for people to avoid it, so there’s always more for me. Make it for Halloween or any other day. Black sesame seeds are widely used in Chinese medicine. Science suggests they may lower blood pressure and protect against oxidative stress (1). They may also reduce total cholesterol and LDL levels as well as protect cardiovascular, liver and kidney function, among other positive outcomes. Scientists have found at least 20 metabolites that are higher in black sesame seeds than in the white variety and might be responsible…
