Recipe: Eggplant, beef & mushroom casserole

    June 29, 2019 /

Eggplant, beef & mushroom casserole is the perfect winter dish. It is not only warming and comforting, but it also contains a lot of veggies and good quality protein. I used organic mince with organs from Feather and Bone, but you can use regular beef mince. Feel free to add whatever vegetables you have lying around in your fridge. If you don’t do dairy, it tastes wonderful without the cheese, too.

    Is dairy good for you?

    March 20, 2019 /

Dairy products and alternatives constitute one of the five food groups in the Australian Dietary Guidelines. “Alternatives” are included in this group because there is an increasing number of people who cannot or choose not to consume foods derived from animal milk. Is dairy good for you? As it’s often the case, it depends. What is dairy? Dairy products is the name given to milk and products made from milk of animals such as cows, goats and sheep. This includes fermented milk products such as yoghurt, kefir and cheese. While cream, ice cream and butter are technically dairy products, they should not be consumed on a regular basis. Nutrients in…

    Recipe: Asparagus and feta frittata

    November 24, 2018 /

This asparagus and feta frittata is a quick breakfast you can make on the weekend and refrigerate to eat during the week. It’s a great way of consuming quality protein, calcium and vegetables in the morning. Of course, you can also pair it with a salad to have it for lunch or dinner. You can use this same basic recipe as a template and substitute your favourite vegetable and cheese. Feel free to add your favourite herbs and spices, too.

    Recipe: Mixto completo (sort of)

    December 10, 2014 /

Another sandwich recipe? Really? Yeah, we still got a lot of protein bread in the freezer. Peruvians took the French classics croque monsieur and croque madame and made the poor person’s versions mixto and mixto completo. These generally contain jamón inglés (regular leg ham) and Edam cheese. The completo (equivalent to the croque madame) has a fried egg. These are normally buttered and put in a sandwich press. Another option is to heat it on a flat grill iron (or pan). When using this method, it’s common to cut a whole on the top slice of bread with a small glass or cookie cutter and pour the egg in the…
