Recipe: Chapana (Peruvian cassava dessert)
This is not a super well-know Peruvian dessert but is as authentic as it can get. In fact, apparently it’s been around for way longer than the popular desserts that appeared when we were a Spanish colony. I’m usually biased toward chocolate when it comes to sweets, but this is an exception. I think this is in part because there are childhood memories attached to chapana. I recently learned this is one of my father-in-law’s favourite desserts, too. Recipe: Chorizo & cassava tortilla
I’m not an expert in the history of the tortilla española (Spanish tortilla or omelette), but I believe the traditional tortilla has nothing else than eggs, potatoes and onions. Outside of Spain, however, you can find tortillas with all sorts of ingredients, capsicum, chorizo and mushrooms being some of the most popular. This time I wanted to try some chorizos from Rodriguez Bros that I bought at my local market, so I made a bastardized version of the dish. By the way, the chorizos were delicious, a bit spicy, and while they have sugar and milk in them they’re at least gluten-free.

Recipe: My mum’s roast chicken and mash with a twist
For the vast majority of the population, mum’s always the best cook. Even when I tease my mother because she never measures ingredients or because she has occasionally fallen asleep and let dinner burn, I will always think her food is the best in the planet. She learned to cook because she “had to” when she got married and even when she worked hard for 33 years of her life, she managed to have a delicious dinner on the table most days (when she actually cooked instead of reheating or frying some processed food-like stuff).
