Ingredients

  • 1.5 kg pork shoulder
  • salt and pepper
  • 1 apple
  • 1 red onion
  • 1/2 cup coconut barbecue sauce or your barbecue sauce of preference
  • 1 tsp liquid smoke optional

Brussel sprouts and fennel

  • 500 g Brussel sprouts
  • 2 small fennel bulbs
  • 1 tbsp fat of choice (bacon fat, tallow, ghee or butter)
  • salt and pepper

Instructions

Pork

  • Season pork with salt and pepper, place in slow cooker.
  • Peel, core and slice apple.
  • Slice onions.
  • Cover pork with apple, onions, barbecue sauce, and liquid smoke. Cook on low for 8 – 9 hours.

Brussel sprouts and fennel

  • Halve Brussel sprouts and steam for 3 minutes.
  • Thinly slice fennel.
  • Heat fat in a pan at medium-high heat, cook fennel for 3 minutes, add Brussel sprouts and cook for another couple of minutes. Season with salt and pepper.
  • Serve and enjoy.
