These carrot and orange muffins are a healthy treat you can bring to your next picnic. They also make a great alternative to store-bought muffins and cakes.
Whisk egg in a medium bowl. Add grated carrot, orange juice and zest, and butter. Mix well.
In a separate bowl, mix almond meal, sweetener and baking powder.
Mix wet and dry ingredients, pour into muffin liners and bake until the top is brown and a skewer or chopstick inserted in the middle comes out clean (15-20 minutes).
