BBQ nuts

This recipe takes inspiration from US-style BBQ rubs.

Ingredients

  • 250 grams raw mixed nuts about 2 cups
  • 1 tsp paprika or smoked paprika if not using liquid smoke
  • 2.5 grams fine salt about 1/3 tsp
  • 1/2 tsp ground black pepper
  • 1/4-1/2 tsp natural sweetener e.g. monk fruit or stevia
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1 pinch cayenne pepper optional
  • 1/8 tsp liquid smoke optional, use regular paprika if you use liquid smoke

Instructions

  • Preheat oven to 150°C (fan-forced).
  • Soak nuts in a bowl and cover with water. Set aside while you measure the rest of ingredients.
  • Mix all ground spices and seasonings.
  • Drain nuts and put them back in the bowl. Cover with seasonings and liquid smoke if using. Stir well and place on a baking tray lined with baking paper.
  • Bake until all nuts are dry and crunchy but not burnt, stirring mid-way through. This should take 12-15 minutes but the exact time will depend on your oven.
  • To store: let nuts cool down completely on the tray before placing them in an airtight container. Place container in freezer or fridge for maximum freshness.
